Some days, I wish we could all live on a diet of chocolate and peanut butter, cream cheese frosting, and fudgy brownies a la mode. But the truth is that most of the time, I actually really enjoy eating my fruits and veggies too. I guess when it comes down to it, I just really like food!

Finding balance in life in general, but also specifically with food, is important to me. We indulge in lots of cake in our home, but we also eat pretty healthy the rest of the time. And I feel like the story I’m sharing here in my little corner of the internet would be incomplete if I didn’t show some glimpses of that as well.

So here’s the deal, I drink a green smoothie almost every single morning. I love starting my day off on the right foot with a few servings of fruits and vegetables. Blending up my morning smoothie has become such an established part of my morning routine, and I really appreciate having that rhythm each day. Big bonus points for the fact that it also makes mornings/grocery lists/life a lot simpler: Bananas. Spinach. Citrus. Frozen Fruit. Those are all absolute staples in our house. I barely even have to think about it anymore.

One morning, I also had a bunch of fresh parsley from my mom’s garden. For some reason, I’m really bad at cooking with fresh herbs. Don’t get me wrong, I love the idea in theory, but I think I’m just not used to having them on hand. So I’m always looking for ways to use herbs and and adding them to my smoothie seemed like the obvious choice. I mean… parsley is green. So why not, right?

This pineapple parsley green smoothie is light and super refreshing and you will totally feel good about it! Each weekend, I make some energy bites, a batch of these muffins, or homemade granola for the week ahead. Then I just whip up our smoothies each morning, and we are good to go for breakfast!

Pineapple Parsley Green Smoothie

Course Breakfast, Snack
Prep Time 10 minutes
Total Time 10 minutes
Servings 2 servings

Ingredients

  • 2 cups spinach, tightly packed
  • 2 medium-size bananas
  • juice of one lemon
  • 1 cup cucumber, chopped
  • 1 cup fresh pineapple, chopped
  • 2 tablespoons parsley leaves, loosely packed (or, to taste)
  • 6-8 ice cubes

Instructions

  1. Add all ingredients to blender and blend until smooth.

  2. If blades are not turning, or smoothie ingredients are not blending well, add a little water at a time, just to get it moving.

  3. Once blended smooth, pour into two glasses and enjoy!
